The Wines... Trinch! is a lovely, youthful, fruity Cabernet Franc, great for serving slightly chilled with salmon. Nuits d'Ivresse is a wine with balanced concentration and elegant lightness, bottled with no sulphites. Cabernet Franc de Pied is a special cuvée made from ungrafted vines planted on pre-phylloxera rootstock. Clos Sénéchal is from 15 and 30 year old vines aged in barrel for five months. These are just a few of their Bourgueil bottlings, they also grow Cabernet Franc in Chinon.
Catherine & Pierre... Pierre Breton began farming his estate in 1982, and Catherine joined him in 1989. One of their goals as growers is to maintain the life of their soil. They do this by promoting it with wholly natural supplements, and never damaging it with chemicals. Coincidentally, in the Loire Valley Breton is another name for Cabernet Franc.
The Naturalistic Way... Biodynamic methods have been employed since 1994, which includes organic farming and natural winemaking. In the vineyards they enrich their soil with organic manure, use herbal and mineral preparations to combat vine disease, limit yields for optimum quality and hand-harvest. In their cellar they rely on wild yeasts contained on the grape skins for fermentation, add little or no SO2 to the wines and bottle without filtration. The product is natural, hand-made goodness.
