region... If I could rewind to 18 I’d become a Piedmontese wine expert.
Half a lifetime is probably too short: of Italy’s 20 wine producing
regions, this is the one that verges on too daunting to fully
comprehend. Piemonte has real depth and diversity of grapes, producers
and sub regions. In most parts of Italy Cavalotto would be a runaway
star, miles ahead. In Piemonte they vie for attention with a large pack
of similarly excellent estates. Rising tide...
Freisa... You want to like it. The name appeals, correctly suggests fruit, liveliness, a wine of aromatic intoxication. Cavalotto deliver a laudable rendition of one of Piemonte’s most likable grapes. Nebbiolo may perpetually steal the show but Freisa could provide the entertainment that you really came looking for.
With Food... If you cook with a healthy, fresh palette of flavors, more vegetable than animal (though Freisa with a pan seared pork chop sounds appealing) and with seasonal notes shading to autumn Freisa will be right for your dinner. Salmon with garlic mashed potatoes, polenta with stir-fried chanterelle or porcini mushrooms: basically go nuts, have fun and bring Cavalotto along.
