When I think of coffee at 3CUPS, this is what comes to mind. I drink this almost every Saturday morning that the shop is open, and just recently bought a bag for my home press pot.

I'm addicted, but trying to branch out. It's not easy.

1. The Coffee... Traditionally cultivated in the remote community of Dolok Sanggul—located near the giant Lake Toba in the mountains of Lintong, Sumatra—this unique coffee offers flavors of green peppers, savory herb and spice, profound depth, and a smooth, syrupy body.

 

2. The Exporter... Dariusz Lebanowski, a Polish national who now lives in Sumatra, lives and runs a coffee mill in Sumatra. He has become famous for the coffees he exports (including the marvelous Lake Tawar), and is the expert on the coffees from this region. This year, Dariusz agreed to work with us to help find and focus on a specific coffee town, getting to know the town's coffee and really investing in a relationship. We began our work, and the cups held the answer: we found that the most beautiful, resonant, delicious cups came from Dolok Sanggul.

 

3. The Process... The coffees of Dolok Sanggul are amazing. Picked and partially prepared by farmers, traded by Betel-driven Coffee Women, collected and dried by the millers, and prepared for export by Dariusz; these coffees, when great, represent a miraculous triumph of coffee quality in spite of a complex process.
