3 Fundamentals of Taste

Body... Refers to the weight and texture of the coffee in your mouth. Coffees can range from thin and light, to medium and full, to syrupy and plush.

 

Acidity... Refers to the bright, lively characteristic that makes coffee refreshing and delicious - a positive characteristic in coffee, just as it is in wine. Acidity has nothing to do with pH; in fact, coffee is far less acidic than Coca-Cola. Acidity creates balanced flavor and is a fundamental attribute of great coffee.

 

Flavor... Refers to the overall impression you experience when you taste a coffee. It is the gestalt of aroma, body and acidity. It’s the specific references – such as spice, chocolate, or butterscotch – that are found naturally in great coffee.
