My Dinner with Wine, March 6th 2009

Wow. For a place that tends to put everything between slices of bread, Toast really makes amazing crudo. If Rio Maggio Telusiano from the Marche isn't at hand (which it wasn't) a tasty Vermentino will do the trick with this fresh and addictive appetizer. I like Le Calle's Tuscan Vermentino, and the Comte Peraldi Vermentino from Corsica. I suggest dumping out that dull Pinot Grigio and drinking interesting Italian whites this spring/summer instead. Maybe you can cook something in the Pinot Grigio.... So I have a personal three panini minimum at Toast, along with a crostini rider, preferably chicken liver flavor. So to cover all these bases we ordered Barbera d'Asti. It was best with the mortadella sandwich, but did good things to the sausage and rapini panini, too. The farmer's egg panini was understandably better on its own, though I'd like to have one with a glass of Guy Larmandier Champagne. In April we'll take 3CUPS on the road, visiting Toast Paninoteca's downtown Durham (Five-Points) location for a lean, mean wine dinner. Watch this space for details....
