juicy. The wine is fermented and aged in tank, using no oak. All the
wines at this address are certified organic. They are truly the product
of mixed-use agriculture.
16 of Sainte Marie des Pins' 56 hectares are planted to vines. Organic
is great, but avoiding monocultures and preserving green space are
equally important.
The People... I met Henri and
Marie Gayzard in their native Languedoc region. They smile a lot. They
seemed relaxed. They grow figs and peaches. They believe the domaine
they own has been in existence since the 15th century.
The
Land... Sainte Marie des Pins is an estate in the heart of
Mediterranean French wine country. Inland from Narbonne, south of the
beautifully restored medieval walled city of Carcassonne, proximate to
the southern sparkling wine mecca of Limoux. Here, near the Canal du
Midi, high inland hills allow dedicated growers like the Gayzard clan
to make tasty reds and whites.
