Do you really need any exhortation beyond this photo to come out tomorrow afternoon and taste 8-10 delicious new roses (for free!) to find which one Mom will love getting on Sunday, along with a copy of Lantern chef Andrea Reusing's new cookbook? Didn't think so.

Now with expanded wine by the glass offerings. Local farmer-chefs (and spouses) Austin and Dani Genke are back in the new year serving up small plates built from the flavors of their farm in Cedar Grove.  This event will now be on first Fridays of every month. This month's menu:
  • spring onion & celery root soup
  • grilled asparagus with goat cheese cream, shaved egg
  • mixed green salad with feta, pickled radishes, turnips, arugula pesto dressing
  • braised pork bruschetta with sautéed kale, Hickory Grove cheese, jus
  • fresh pasta with english peas, applewood-smoked bacon
  • strawberries  lemon short cake. chamomile cream

The greatness of spring is perfect fresh vegetables. At home we build meals laden with the flavors that have been absent from the market and garden for too many long cold months and serve the pink wines that are perfect with these light meals.

This informal tasting will feature too many new arrivals from our favorite rose makers. You will be blown away by how good these wines are. Sometimes rose gets short-changed, badmouthed, ignored. Fine: this event will be a free wine tasting party for the rest of us, drinkers confident enough in their own tastes to fess up to loving salmon-to-ruby colored wines.

If you haven't tasted the Farmhand Foods sausages yet, then you need to get down here for this event! (m)eat local We'll be pairing great wines with great food from the Farmhand Foods Sausage Wagon. This is an event that means a lot to us. Farmhand Foods sells locally, ethically produced meats from a network of small farms. The sausage is great, and its use of great ingredients helps to keep smaller livestock farmers in business. 

3CUPS will be pouring a mess of delicious wines to wash down the Wagon's tasty dinner options. “It’s not always easy to sell all the animals I raise or to find a market for all parts of the animal,” says Bailey Newton, Triple B Farm. “That’s why I joined Farmhand Foods’ Producer Network. It lets me focus on farming but stay connected to the folks enjoying my meat.” Farmhand Foods’ network of pasture-based farm suppliers initially includes Parker Farm (Orange County), Triple B Farm (Granville County), Leigh Farm (Martin County), and the NC Natural Hog Growers Association based in Duplin County. The company purchases whole animals and handles all logistics, processing, distribution, marketing, and sales necessary to provide local wholesale buyers with a consistent, high-quality supply of local beef and pork.

GuatemalaI am happy to see this week’s coffee from Huehuetenango arrive, because it is close in proximity and quality to a 3CUPS staff favorite from the last two years, Finca Nueva Armenia. The coffee is called Concepción Huista and is grown high in the mountains on the western border of Mexico. The coffee has delicious fruit flavors and buttery-rich body.  Concepción Huista organically grows two heirloom coffee varieties, Caturra and Catuai, at altitudes up to 2,000 meters. Traditional processing occurs on site to preserve the quality of their organic heirloom fruit.  It all adds up to one of the most complex coffees we will be featuring this summer.Matt Souza
