Featuring a version of Shrimp & Grits that you probably have not had before, a collaboration by Austin of Boxcarr Farms and Lex Alexander, evolved from a looser and more rustic plate than the classic beloved at Crook's Corner. This dish was served to Lex years ago in Pawleys Island and he has been playing with it ever since; now, Austin adds his own twist to this satisfying bowl. $35 gets two servings of our Shrimp & Grits Simple Supper and a tasty bottle of wine paired to match, for dine-in or take-home.

Riesling!Locally almost-famous wine fiend Damon Haynes (Centerba Selections) will engage his formidable wine pouring skills and knowledge to win over many unsuspecting customers to the side of Riesling. He will open open many bottles of righteous Riesling, with a focus on a bunch of stuff from upstarts the Mosel Wine Merchant, who are geeks in the best possible way.

We'll serve maybe 8-10 wines. They will be awesome and the event will blow the doors off your expectations of Riesling, and free tastings. It is high time Germany and Austria came out of the corner of our shop and into prominence at the center of the store. A representation of what they mean to us. Or Jay, anyway.

The stars are aligning. Now's the time.

Riesling will take over Chapel Hill, again. And let's face it, Riesling is what I am into, so I want 3CUPS to be the the catalyst for this movement.

Cooking in the MomentYour house will be a better place with a copy of Andrea Reusing's new book in it. We'll be hanging out with Andrea, selling wine by the glass and shiny new copies of Cooking in the Moment. She will be signing books and serving snacks including 18-month ham from Chapel Hill Creamery's whey-fed pigs and pickles, plus the Farmhand Foods Sausage Wagon will parked out front.

In Cooking in the Moment, Reusing seamlessly blends down-to-earth kitchen advice with delicious, doable recipes, including childhood favorites (chicken and dumplings), simple one-pot dinners (shrimp, pea, and rice stew), as well as feasts to satisfy a crowd (roast fresh ham with cracklings). Her restaurant, Lantern, has a tremendous positive impact on food and life in Chapel Hill. Andrea's work focuses attention on meticulously prepared food, often crafted from ingredients grown on small local farms. Andrea is a catalyst. By diligently supporting farmers who employ quality-oriented methods she inspires better food and better farming across North Carolina. And there is nowhere more appealing to eat in our community than Lantern. It is both the place we visit with friends for perfect everyday meals and where we drag unsuspecting out-of-towners who need to know that amazing food does not end at the Mason-Dixon line.

In a few weeks, on Saturday, April 23rd, we’ll be hosting the first ever Farmhand Foods (M)eat Up.  You all probably know Farmhand Foods from their Sausage Wagon - a regular feature here at 3CUPS.  But Farmhand Foods also sells a variety of local pasture-raised beef and pork products to area restaurants and retailers.  And starting soon, through monthly (M)eat Ups, they will be offering fresh cuts of this same beef and pork for sale direct to consumers.  All of their meat is sourced from the Farmhand Foods Producer Network - a remarkable group of local farmers who raise their animals humanely, on pasture, without the use of antibiotics or added hormones.  Purchasing through a Farmhand Foods (M)eat Up is a great way to support local farmers while bringing home lean & delicious meats for dinner.  

 

How does it work?  On selected Saturday afternoons, during our free wine tastings, Farmhand will be on site with the meat cuts they have available fresh that week from their network of farmers.  This will typically include what are known as the “middle meats” or higher-end cuts such as beef tenderloin, NY strip, rib-eye, and porterhouse-cut pork loin.  Supplies will be limited and sold on a first-come, first-served basis (payable by cash, check, or credit card).  All of the meat will be vacuum-sealed and sold fresh so that you can take it home that night for dinner or stick it in the freezer to eat later.  And of course, on those Saturdays, we’ll be pouring wines that pair well with their meat selections so that you’re fully prepared for an ethically-sourced, great-tasting dinner at home.

The Wine... is Chardonnay of incredible liveliness, character born of correct farming, native yeast fermentation, and long contact with the fine lees. Normand plows, uses no herbicides or pesticides, and the finished wine is better because of diligent farming. Consider serving the Macon la Roche Vineuse with fresh white fish or roasted chicken.

This coffee hails from a very remote mountainous region of northern Peru (Alta Ihuamaca) in a valley with no name. Two coffee farmers, Norbel Alarcon and Jose Carhuachinchay, have separated out their heirloom variety coffees from the bunch. I am thankful that the coffee has made it to our counter, and to have the opportunity serve it to you. I think about this coffee in terms of some of the best single-origin chocolates I have tasted in terms of flavor clarity, complexity, and richness. There are in fact some very enticing dark chocolate flavors and aromas present in the cup. The gently balanced acidity combined with a very smooth medium body will go well alongside fresh-baked fruit filled pastry to start your day (Sunday brunch coffee?).Matt Souza
